Few words today, friends. But, a yummy recipe.
Today, I’m grateful for the crockpot. For the ability to add a few ingredients to the trusted ceramic dish, press a button, and 8 hours later have a warm supper on the table. Husband is traveling, I need a spread sheet to map the six events the Littles and I will attend between 5:00 – 8:00 pm tonight, and I’m leaving town again, too. {p.s. I don’t even know how to use Excel}
I’m heading to Nebraska to the Jumping Tandem Retreat. This year’s conference, hosted by the incredible Deidra Riggs, is on Grace. In my session, Grace at the Table, I’ll be sharing a bit of my story — how I was once excluded from a very important table — The Lord’s Table, of all places. It’s no whim that God gave me a table. It’s a story of his great grace.
I would love your prayers as I travel and speak. Especially for Husband and the Littles — who at least pretend I’ll be missed.

PrintCurried Chicken with Ginger & Yogurt (Slow Cooker)

- Total Time: 7 hours 10 mins
- Yield: 4-6 1x
Ingredients
- 6–8 skinless chicken thighs {appx 2 lbs}
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1/3 cup tomato paste
- 3/4 cup water
- salt & pepper, to taste
- 1/2 cup Stonyfield whole-milk plain yogurt
- 2 green onions, thinly sliced
Instructions
- Place chicken in the slow cooker. Sprinkle with salt & pepper. Top with onions and garlic.
- Stir together ginger, curry powder, tomato paste and water until combined. Pour over chicken.
- Cook on low for 7-8 hours.
- Just before serving, stir yogurt into chicken and stir until well combined. Garnish with green onions.
- Serve with rice and/or nan bread.
