Easy Homemade Tomato & Basil Soup

Quick and delicious, this easy homemade tomato soup is a perfect weeknight supper. Serve with toasted cheese sandwiches or top soup with croutons and a big spinach salad.


  • 28 oz can of fire-roasted tomatoes
  • 14 oz can of fire-roasted tomatoes
  • 4 cups chicken broth (use vegetable broth or juice to make vegetarian)
  • 12 fresh basil leaves
  • 1 cup heavy cream
  • 1 stick unsalted butter
  • salt & pepper


  1. Simmer tomatoes and broth in a saucepan over medium heat for 20-30 minutes. Puree in a blender with basil. Return to saucepan, add cream and butter. Stir until well combined. Season with salt & pepper to taste.
  2. Tomato Basil Soup freezes well.
