Curried Chicken with Ginger & Yogurt (Slow Cooker)

Serves: 4-6
Ingredients
  • 6-8 skinless chicken thighs {appx 2 lbs}
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • ⅓ cup tomato paste
  • ¾ cup water
  • salt & pepper, to taste
  • ½ cup Stonyfield whole-milk plain yogurt
  • 2 green onions, thinly sliced
Instructions
  1. Place chicken in the slow cooker. Sprinkle with salt & pepper. Top with onions and garlic.
  2. Stir together ginger, curry powder, tomato paste and water until combined. Pour over chicken.
  3. Cook on low for 7-8 hours.
  4. Just before serving, stir yogurt into chicken and stir until well combined. Garnish with green onions.
  5. Serve with rice and/or nan bread.
