Sunday Pot Roast in the Slow Cooker

Delicious homestyle pot roast made easy in the slow cooker.

Ingredients

  • 3 1/2 lb chuck roast
  • 1 tablespoon olive oil
  • salt & pepper
  • 4 carrots, peeled and sliced
  • 1 onion, sliced
  • 2 celery ribs, sliced
  • 4 garlic cloves, minced
  • 1 1/2 cups mushrooms, sliced
  • 1 (14.5 oz) can Fire-Roasted tomatoes (I use Muir Glen)
  • 1 (6 oz) can tomato paste
  • 1/4 cup red wine (or beef broth)
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon sea salt
  • 1 teaspoon fresh ground pepper

Instructions

  1. Season the roast with salt and pepper. In a large skillet, heat the oil over medium heat. Brown the roast on all sides.
  2. Transfer roast to the slow cooker. Add carrots, onion, celery, garlic and mushrooms. In a small bowl stir together tomatoes, tomato paste, wine, brown sugar, Worcestershire Sauce and seasonings. Pour over the roast and vegetables.
  3. Cook on LOW for 8-10 hours, until roast is fork tender.
