Delicious Grain Free Waffles

Light and fluffy with a hint of sweet coconut, these waffles are a morning crowd pleaser.

Ingredients

  • 3 eggs, room temperature
  • 1/2 cup coconut milk (from a can, not the carton kind)
  • 3 tablespoons maple syrup
  • 3 tablespoons coconut oil, melted
  • 2 teaspoons vanilla
  • 1 cup raw cashews
  • 3 tablespoons coconut flour
  • 3/4 teaspoons baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Fresh berries for topping!

Instructions

  1. Place all ingredients in a heavy duty blender, or Vitamix. Blend until smooth. The batter will be very thick. Spoon batter into waffle iron and cook until golden brown.
