Kristin’s Granola Balls

These healthy no bake granola balls are easy to make and quick to disappear! Easily made gluten and dairy-free by using Bob’s Red Mill Gluten-Free Oatmeal and Enjoy Life Chocolate Chips.

Ingredients

  • 1 cup unsalted, dry roasted peanuts
  • ½ cup agave nectar
  • ½ cup walnuts or cashews (either one works well)
  • 1 tsp vanilla
  • 1 pinch of salt
  • 2 TBS ground flaxseed
  • 2 cups old-fashioned rolled oats*
  • ¼ cup of chocolate chips or raisins*

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a food processor, grind peanuts with the ‘s’ blade until finely chopped, but not buttery. Add the agave nectar, nuts, vanilla, salt and ground flaxseed. Process until all the ingredients are well combined. The consistency will still be a little chunky.
  3. Add the oats and pulse until thoroughly mixed. You may have to scrape the sides of the processor a few times as the ‘dough’ will be very thick.
  4. Pour the dough into a bowl and with your hands mix in the chocolate chips or raisins.
  5. Wet your hands with a little water to prevent the dough from sticking, pinch off pieces of the dough and roll into bite size balls. Place granola balls on the parchment lined baking sheet and refrigerate for 30 minutes.
  6. Makes approximately 20 bite size granola balls that will keep in the refrigerator for several days, if they last that long.
