Roasted Chicken with Apples & Shallots

A yummy savory and sweet supper to welcome the first signs of Fall.


  • 4 apples, peeled, cored, and sliced
  • 2 shallots, sliced
  • 1 large sweet potato, peeled and diced
  • 1 tsp coarse sea salt
  • 1 tsp fresh ground pepper
  • 23 tablespoons olive oil
  • 6 chicken breasts, bone-in, skin on
  • 3 tablespoons fresh sage, chopped


  1. Pre-heat oven to 400 degrees.
  2. In a large bowl, toss apples, onions, and sweet potatoes with half of the olive oil. Transfer mixture to a large roasting pan.
  3. Arrange the chicken, skin side up, in the pan on top of the apple mixture. Drizzle the chicken with remaining olive oil. Sprinkle generously with salt, pepper, and sage.
  4. Roast for 40 minutes, or until chicken is fully cooked.
  5. Spoon the apples, onions, and sweet potatoes onto each plate and top with a chicken breast.
