St. Lucia Day Cookies

Celebrate St. Lucia Day with these delicious traditional Christmas cookies.

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg, separated
  • 1 teaspoon vanilla
  • 2½ teaspoons cinnamon
  • 2 cups flour
  • 1 pinch salt
  • ½ cup pecans, finely ground

Instructions

  1. Cream the butter and sugar until fluffy.
  2. Add the egg yolk and vanilla. Continue to beat until well combined.
  3. Add the flour, cinnamon and salt. Beat until combined.
  4. Roll approximately a tablespoon of dough with the palm of your hands.
  5. Press to flatten on a greased cookie sheet.
  6. Brush each flattened cookie with egg white and sprinkle with pecans.
  7. Bake at 350 degrees for 12 minutes, or until cookies begin to brown.
