Crispy Oven Baked Potato Bites

Parboiling your spuds before baking is the secret to perfectly crisp oven baked potatoes.


  • 1 1/22 lbs new potatoes, quartered
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon garlic salt
  • 1/2 teaspoon black pepper


  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  2. Bring a large pot of water to boil. Add potatoes and boil 8 minutes.
  3. Drain potatoes into a colander.
  4. Melt butter and olive oil in the cooking pot. Pour drained potatoes back into pot. Add garlic salt and pepper. Stir until the potatoes are coated.
  5. Place potatoes skin side up on parchment lined baking sheet.
  6. Bake for 30 – 40 minutes, or until perfectly crispy.
