Grilled Romaine Salad

Light and healthy this flavorful salad is a must for your grill this summer.

Ingredients

  • 23 romaine hearts
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar (or red wine vinegar)
  • 1 tablespoons chopped fresh herbs (I used rosemary, basil, and lemon thyme)
  • salt & pepper
  • roasted pepitas (pumpkin seeds)

Instructions

  1. Slice the romaine hearts in half lengthwise. Peel off any old leaves. Whisk together the olive oil, vinegar, herbs, salt and pepper to make a vinaigrette. Brush the lettuce hearts all over with the vinaigrette. Grill the romaine hearts, cut side down, until there are grill marks, approximately 3 minutes. Top with roasted pumpkin seeds. Serve immediately.
