Summer is finally here! We are a week into our summer vacay and enjoying the slower pace. For the Littles summer means no school, sleeping in, late night movies, camp, and loads of chillaxin. My daily routine relaxes, too, and I love how our suppers shift to lighter fare enjoyed al fresco. We eat most of our evening meals by the pool. Until it gets so hot Husband complains, “I’m shvitzing, we can’t eat outside tonight.” But it’s June so the shvitzing is still minimal.
Our Sunday suppers have definitely shifted to the flavors of summer. Loads of fresh, organic veggies from our CSA basket, and lots of grilling. Grilling keeps the kitchen cool and me outdoors by the pool so I can keep an ever watchful eye on the Littles.
One of my favorite side dishes is grilled romaine hearts. Tossing romaine lettuce on the grill is so simple and the flavor of the smoky grill scream summer. There are endless ways to dress up your grilled salad, but I like to keep it simple. In keeping with our laid back days of summer. Grilled Romaine Hearts

Light and healthy this flavorful salad is a must for your grill this summer.

Ingredients
- 2–3 romaine hearts
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar (or red wine vinegar)
- 1 tablespoons chopped fresh herbs (I used rosemary, basil, and lemon thyme)
- salt & pepper
- roasted pepitas (pumpkin seeds)
Instructions
- Slice the romaine hearts in half lengthwise. Peel off any old leaves. Whisk together the olive oil, vinegar, herbs, salt and pepper to make a vinaigrette. Brush the lettuce hearts all over with the vinaigrette. Grill the romaine hearts, cut side down, until there are grill marks, approximately 3 minutes. Top with roasted pumpkin seeds. Serve immediately.
