Mrs. Kravitz’s (Mother’s) Soup

As promised, here is the Cauliflower Soup recipe from my dear friend and neighbor.  I call her Mrs. Kravitz because we used to live across the street from each other.  Those were the good old days when we left the doors open wide for the kids to run back and forth between houses.  Most days it seemed there was no dividing line between where my family ended and hers began.  Although we moved less than a mile away, we have to plan a little more efficiently to get our 8 children together. On the bright side, Mrs. Kravitz no longer has to witness me sneaking around in my bra and underwear for late night snack attacks!

Don’t let the cauliflower throw you.  This is great soup and is a wonderful way to get your children to eat veggies!

Cauliflower Soup

  • 2-3 T. butter
  • 2 c. chopped onion
  • 1 head cauliflower, chopped
  • 3 c. chopped potatoes
  • 1 c. chopped carrots
  • 1 t. caraway seeds
  • 6 c. chicken broth
  • 1/2 -1 t. salt
  • Pepper, to taste (I used LOTS!)
  • 1/2 can evaporated milk
  • Cheese, to taste (handful of shredded whatever)

Saute veggies in butter.  Add broth and bring to boil. Reduce heat and

simmer 30 minutes or until veggies are tender.  Add rest of ingredients.

    Dang!!! I had this soup for lunch today. Made a batch over the holidays and had some leftover in the freezer… It just never fails to please. So crazy that even I could like something with cauliflower…..
