Blueberry pancakes?!? Looks like the holiday continues, huh? Think again my turkey stuffed friends. I’ve extolled the virtues of the Best Blueberry Pancakes before, but thought it would be a healthy reminder in case anyone else was feeling seriously bloated this post-holiday Monday morning.
I make these pancakes almost every morning. They are filled with protein and just enough healthy carbohydrates to get you through your morning. Just what the doctor ordered after a feast filled weekend. Well, if not the doctor, then definitely the trainer. These pancakes are a tasty, but health conscious treat.
Best Blueberry Pancakes
6 oz egg whites
1/4 cup oatmeal, not instant
1/4 cup blueberries (I defrost frozen berries)
2 Tbs flaxseed
1 -2 Tbs cinnamon
Mix ingredients in a blender, I use a mini one. Pour onto lightly greased skillet. Cook one to two minutes per side until pancakes are fluffy. I drizzle a little maple syrup or agave nectar to sweeten things up a bit.

These are awesome! I’ve made oatmeal and banana ones like this and they were yummy. Blueberries are even better in my book.

They look good…trying to detox,too, as we had homemade Kerbey Lane pancakes Sunday morning to end the week!
