Nordstrom Tomato Basil Soup Recipe

We love tomato soup. It’s our go-to comfort soup in sickness and in health. When I found the recipe for Nordstrom’s famous tomato basil soup it became an instant favorite in our house.

Years ago, when the Littles first acquired a taste for tomato soup, we taught them to pick up their bowl and tilt it, just so, to get the very last drop. With much fanfare and plenty of slurping we dubbed this manners-be-damned action The Texas Tip.

The Texas Tip was all fun and games until I took the Littles to Nordstrom one day for lunch. All that slurping in public? Not my proudest moment as a mama.

We don’t go to lunch at Nordstrom these days — the Littles are now teenagers and prefer to spend their time at the makeup counter or shoe department. But, when they want a big bowl of comfort food at home high on the request list is always a bowl of tomato soup.

Do we still practice The Texas Tip? I’ll never say. . .

Nordstrom’s Tomato Basil Soup

A delicious tomato soup from the famous department store. Carrots give Nordstrom’s tomato soup a sweet flavor making it a crowd pleaser for all ages.

Ingredients

Scale
  • 6 Tablespoons olive oil
  • 4 large carrots, peeled and diced
  • 1 large onion, sliced
  • 1 Tablespoon dried basil, crushed
  • 3 28-oz cans whole peeled Roma tomatoes
  • 1 quart chicken broth
  • 1 pint heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large, heavy saucepan, heat the olive oil over medium-high heat. Add carrots, onion, and basil. Cook until vegetables are softened, about 10 minutes.
  2. Add tomatoes and broth, bring to a boil, then reduce heat and simmer 30-40 minutes.
  3. Remove from heat and allow soup to cool slightly. Puree soup a blender or food processor until smooth, in batches if necessary. Pour pureed soup back into to pot.
  4. Stir cream into soup, a little at a time, over low heat, until desired texture is reached and soup is just heated through. Season to taste with salt and pepper, and serve warm.

    Kristen, have you tried that partially dried basil in the little round counter in the produce section of the grocery store? It is ready to go with no chopping. I put it in my soup after I puree so I have the color soup I like. Just sharing the love…Thanks for the recipe. I made Nordstroms White Chocolate Bread Pudding for Christmas and it was delish!

    Made the soup 4 times in two days with my students. I found that it could use a few pinches of sugar, depending on how tart the tomatoes are. it was a hit with students and staff alike.

    I’ve made this a few times. The last time, I shared it with my parents along with grilled cheese sandwiches on homemade bread. Needless to say, mom asked me to make it for them again! I’ve also added a dash of sugar after I take my helping out of the pot and the family really enjoys that. I gave my oldest son who doesn’t live at home any longer a bowl to take with him for lunch the next day. He texted me at lunch and was gushing over it! A hit all the way around!

    Spot on! My 6 year old’s favorite thing to do is eat at Nordstrom for their soup. I used your recipe this evening and it is delicious! My son loves it and so do I! I can’t stop going back to the pot to spoon some into my mouth. Thanks for sharing…this will now be a staple in my house!

      Good question! I’ve never had enough leftover to freeze. However, the ingredients all lend well to freezing so go for it! And, let me know.

    This recipe tastes exactly like Nordstrom Cafe’s tomato soup! I only like Nordstrom’s tomato soup, so I’m so happy I found a copycat version. This is delish with a fresh grilled cheese sandwich! Thanks for sharing the recipe!

    We love this soup! I veganized it by using cashew cream instead of heavy cream (1 cup of cashews blended with 1 cup of water until smooth) and vegan chicken broth or veggie broth. It’s so good!
