Mom’s BFF and I trade emails all the time about food stuff. She is an amazing cook and always has the latest information on cookbooks, new foodie finds and tried & true recipes. So when she asked if I had tried smokey paprika I knew I had to get some right then and there. Mom’s BFF had seen Mario Batali use the spice in a paella dish he made on the Oprah Show. Truth is I had some of the Spanish smoked paprika but I can’t remember when or for what recipe I used the now famous spice.
When I was planning our menu this week, I decided I would incorporate this yummy spice into a rub for a roasted chicken. I always associated paprika with Hungary and never gave it two thoughts. A shake here and there for color and a hint of flavor was generally what I knew about paprika. No more my friends! Try this bold flavored spice and you’ll be on the smoked paprika band-wagon too.
Smoked Paprika Rub
2 tsp smoked paprika
2 tsp brown sugar
1 tsp cinnamon
1 tsp garlic powder
1 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1 (4 – 5) lb whole roasting chicken
2 -3 Tbs. extra virgin olive oil
Pre-heat oven to 325 degrees. Combine spices in a small bowl. Wash chicken and pat dry. Brush the chicken with olive oil and rub the spice mixture to fully cover skin. Place chicken breast side up in roasting pan. Roast chicken for 1 1/2 – 2 hours, or until chicken is fully cooked.

I can’t find smoked paprika anywhere in my town or even nearby!! But I’ll keep looking and hoping. I like paprika in my chili, on my french fries, and on my potato salad. But I bet the smoked one has a lot more taste.
